The Mondano Kitchen Experience is a limited-seat, hands-on culinary event for guests who want to roll up their sleeves, cook alongside our team, and learn the techniques that define the Mondano kitchen.
Each session is immersive and active — you’ll break into small groups, practice essential techniques, taste as you go, and work side by side with the Mondano chefs. The afternoon concludes with a cocktail reception and a three-course, wine-paired dinner featuring the dishes you’ve helped prepare.

Thanksgiving should be about family and friends—not racing from the oven to the stovetop wondering how everything will be ready at once.
Drawing on our experience preparing scratch-made Thanksgiving meals for hundreds of guests—all ready during a tight two-hour pickup window—we'll share the planning strategies and professional techniques that make holiday entertaining calm, organized, and surprisingly enjoyable. And while we'll use Thanksgiving as our classroom, the planning, timing, and preparation strategies you'll learn will apply to Christmas, Hanukkah, Easter, dinner parties, and any special meal where multiple dishes need to come together beautifully at the same time.
In this hands-on Mondano Kitchen Experience, you'll learn how to wet brine and dry brine a turkey, spatchcock for faster, more even roasting, carve with confidence, and make rich, flavorful gravy from scratch. Along the way, we'll share the preparation timeline and behind-the-scenes strategies that allow everything to come together beautifully on the big day.
Then gather around the table in the Olivieri Room to enjoy a Thanksgiving-inspired dinner featuring many of the dishes you've helped prepare, thoughtfully paired with wines selected for the meal.

Some of the fondest holiday memories aren't made around the dinner table—they're made around the kitchen counter.
Join us as we explore the traditions, techniques, and stories behind some of the world's most beloved holiday treats. Together, we'll discover how families around the world gather in their kitchens to celebrate the season, creating beautiful desserts and cookies that have been shared from one generation to the next.
Working side by side, we'll create a spectacular Bûche de Noël, build a towering croquembouche and a festive Sicilian struffoli wreath, shape traditional Lebanese maamoul and Sicilian cuccidati, and explore the distinctive techniques behind European spice cookies—including Mondano's exceptionally moist Italian pepper cookies.
Then gather around the table in the Olivieri Room for a festive holiday dinner, where the beautiful dessert table you've helped create awaits. You'll leave with a beautiful holiday cookie collection, recipes, and techniques to inspire new traditions around your own family's kitchen counter for years to come.
Vol. 9 - Saturday, December 5, 2026 Comfort Food Reimagined: Chef Secrets for the Slow Cooker & Instant Pot
Your slow cooker and Instant Pot can do far more than chili, pulled pork, and pot roast.
In this hands-on Mondano Kitchen Experience, you'll discover how professional chefs transform simple ingredients and affordable cuts of meat into deeply flavorful comfort food—and how those same techniques translate beautifully to the appliances already sitting on your kitchen counter. Working with Italian Braciole, Russian Beef Stroganoff, and Moroccan Chicken Tagine, you'll build classic braises while learning the essential techniques that make them so flavorful.
More importantly, you'll discover that great braises aren't really recipes at all—they're variations on a simple framework that chefs have relied upon for generations. Once you understand that framework, you'll be able to create your own braises using whatever protein, vegetables, herbs, and cooking liquid you have on hand, adapting the process confidently to a Dutch oven, a slow cooker, an Instant Pot, or a traditional tagine.

Vol. 10 - Saturday, January 16, 2027 The Lebanese Table: Family Traditions & Timeless Hospitality
In Lebanese culture, food isn't simply served—it is shared.
Join us as we explore one of the world's great culinary traditions through the warmth of a Lebanese family table. Together, we'll prepare a selection of classic mezze, including silky hummus, smoky baba ghanouj, vibrant muhammara, cloud-like toum, fresh-baked pita, and the celebrated kibbeh nayeh, discovering the techniques, traditions, and stories that have brought families together for generations.
Along the way, you'll learn that every family has its own cherished variations—and that great cooking comes not from rigid recipes, but from understanding the principles behind them. You'll roast eggplants over an open flame, watch garlic transform into a remarkable emulsion, bake pita from scratch, and discover why hospitality has always been at the heart of Lebanese cooking.
Then gather around the table in the Olivieri Room for a family-style feast as the afternoon's creations are joined by grilled lamb kebabs, Lebanese rice, fresh fattoush, seasonal accompaniments, and traditional desserts. Seafood doesn't have to be intimidating. Whether you're standing at the fish counter wondering what's truly fresh, puzzled by shrimp sizes and scallop labels, or simply afraid of overcooking an expensive piece of fish, this class will give you the confidence to choose, prepare, and cook seafood like a chef--just in time for Lent!
Together, we'll learn how to recognize peak quality, understand when frozen seafood can actually be the better choice, identify the signs of truly fresh fish, and discover why great seafood begins long before you turn on the stove. Then we'll head into the kitchen to hand-batter fresh cod for authentic fish & chips, master the secrets to perfectly seared scallops, make a delicious beurre blanc, and break down whole sides of salmon—learning how to transform every part into something delicious.
Finally, we'll gather in the Olivieri Room for a seafood dinner showcasing the day's techniques, proving that exceptional seafood isn't about complicated recipes or expensive ingredients—it's about thoughtful choices, sound technique, and the confidence to recognize quality wherever you find it.

Few things are more satisfying than pulling a beautiful loaf of bread from the oven—but great bread isn't about memorizing recipes. It's about learning to trust the dough in your hands and discovering that some of the best things in the kitchen simply can't be rushed.
In this hands-on Mondano Kitchen Experience, we'll explore three very different approaches to bread making through three beloved traditions. Together, we'll mix and develop our signature focaccia dough, learning the stretch-and-fold method and the magic of an overnight cold proof. We'll bake a rustic Irish soda bread that proves exceptional bread doesn't always require yeast—or waiting. Then we'll shape traditional Italian Pane di Pasqua, discovering the techniques and traditions behind one of Easter's most beloved celebration breads. Along the way, we'll also share a favorite method for creating beautifully colored eggs using patterned silk—a simple tradition that makes every loaf unique.
Then we'll gather in the Olivieri Room for a dinner celebrating the timeless partnership between great bread and great food. One batter becomes four distinct dishes—from a bright breakfast crêpe to savory salmon for lunch, delicate manicotti for dinner, and a dramatic crêpes Suzette to finish. In this fully hands-on session, you’ll master the technique behind perfectly tender crêpes before enjoying a three-course, wine-paired dinner featuring your creations.

Step inside the kitchen and discover why restaurant steaks taste so much better—and how to achieve the same results at home. In this fully hands-on workshop, you’ll learn how to break down a whole tenderloin, from trimming and portioning to tying, and see how restaurants use every part of the cut to maximize flavor and value. You’ll sear your own filet to develop a perfect Maillard crust before finishing it to temperature, mastering the techniques that transform good steak into great steak. Along the way, we’ll separate steakhouse fact from backyard myth—exploring heat control, flipping, carryover cooking, resting, and when (and why) professionals use a thermometer. Build classic accompaniments, including a fond-based green peppercorn cream, traditional Béarnaise, compound butter, and authentic Belgian double-fried frites with sauce Andalouse. The experience concludes with a three-course, wine-paired dinner featuring your steak.

Step outside the kitchen and into the fire. In this hands-on workshop, we’ll explore the art of cooking with live flame—managing heat zones, mastering direct and indirect grilling, and understanding how char and smoke transform ingredients. Drawing inspiration from global cuisines, you’ll build bold marinades, spice rubs, and vibrant summer sauces that elevate everything from meats to vegetables. Learn how to balance fire with freshness, heat with acidity, and smoke with restraint—practical techniques you can apply to any grill at home. The experience concludes with a refined, three-course, wine-paired dinner featuring the dishes we’ve explored together—and a smoked cocktail to begin the evening.

Step into the precision and tradition of the German kitchen in this hands-on exploration of technique and heritage. Learn how to marinate and braise authentic sauerbraten, understanding the role of acidity, spice, and time in transforming tougher cuts into deeply flavorful dishes. Master the art of the perfect schnitzel — from proper pounding and dredging to achieving a crisp, golden crust. Craft spaetzle from scratch and explore the technique of stretching strudel dough until paper-thin before filling and baking. Not at all. The Mondano Kitchen Experience is designed to meet participants where they are. Whether you cook every night or rarely step into the kitchen, we’ll guide you through each technique step by step. Our goal is not perfection — it’s building skill, confidence, and enjoyment that you can carry into your own kitchen.
Please wear comfortable clothing suitable for working in a kitchen, understanding that clothing may get soiled with food elements. For comfort and safety, it is important to wear closed-toe, non-slip shoes. (Sandals and high-heeled shoes are dangerous in a commercial kitchen environment and cannot be permitted.)
A commemorative apron will be provided, and your cocktail reception and dinner will take place in a private dining room with fellow participants — so there’s no need to change for the dinner portion of the event.
